In this cookbook, he shows you how to prepare each vegetable at the optimal time so that it can develop its full flavour. The six seasons also form the chapters of the book, and each chapter begins with recipes that use fresh vegetables raw, for example in an artichoke salad with herbs, almonds and Parmesan. In the recipes that follow, heat comes into play – vegetables are grilled, steamed, braised, poached and sautéed. McFadden explores each type of vegetable in depth, highlighting its best qualities in each season, offers plenty of practical tips and thus encourages readers to try out the more than 200 wonderful recipes – some vegetarian, others featuring meat or fish – at home.
About the authors
Joshua McFadden runs the restaurants Ava Gene’s and Tusk in Portland, USA. Previously, he worked as a chef de cuisine in various restaurants. He spent some time in Rome, where he collaborated on a sustainability project led by organic pioneer Alice Waters. He also spent two years as a manager on a farm in Maine, where he focused on sustainable vegetable cultivation.
Martha Holmberg is CEO of the International Association of Culinary Professionals. Previously, she was editor and food writer for Fine Cooking magazine and food writer for the Oregonian daily newspaper. She lives in Portland, USA.
